Plant based milks (in a nutshell)

Buy raw nuts. (Difficult with cashews)

  • Soak the nuts overnight. (a cup)

  • Drain and rinse the soaked nuts.

  • Remove skins from dark skins nuts by rolling between tea towels - hazelnuts/brazils I am looking at you.

  • Blend the nuts with fresh water. usually 4 cups water to one cup nuts

  • Add lecithin if you like (emulsifies the milk to stop it separating, plus b12 )

  • Strain the nut milk.

  • Sweeten, if desired - agave, honey, cinnamon, vanilla

  • Chill, drink, enjoy.

  • Wash, rinse, repeat once a week for nut milk happiness - milks last up to 5 days in the fridge.

Can keep more concentrated in blending stage them to make a cream, then add hot water just before you drink to make hot lattes.

Flavours - get creative.  Cacao, matcha, turmeric (with black pepper), fruit.

Hemp hearts and oats don’t need soaking if you are in a hurry, though better with 30 mins.
